Eggnog Dutch Baby

Over the last several years, I have watched my friend Lindsay make Dutch Baby pancakes. Her Dutch Baby pancakes rise to perfection and are so creamy and luscious. Inspired by Lindsay, I decided to try making a Dutch Baby with a twist. Because this recipe is so easy to make, you will find yourself making it again soon whether it is a holiday or not.

                                                                          Eggnog Dutch Baby


Ingredients
2/3 cup flour
3 eggs 
2/3 cup milk
3 tablespoons eggnog
1 tablespoon sugar 
pinch of freshly ground nutmeg
3 tablespoons unsalted butter
confectioners sugar

Directions
Preheat oven to 400 degrees.

Combine flour, eggs, milk, eggnog, sugar, and nutmeg in a blender. Blend until smooth.

Place butter in a heavy 10-inch skillet and place in oven. As soon as the butter has melted add the batter to the pan. Tilt the pan so the batter runs evenly to all sides. Return pan to the oven and bake for 20 minutes, until the pancake has puffed up and darker brown on the sides and edges.

Remove pancake from oven. Top with confectioners sugar.
