Greek Kale Salad

I love salad. Although kale salads are not my go to salads, I have decided to incorporate more kale into my diet for the health and nutritional benefits. So today I decided to make a Greek Kale Salad. Hearty, nutritious, and delicious, this colorful and beautiful salad is bursting with bold and delectable Mediterranean flavors and wonderful textures. This scrumptious salad is so good; kale salads now may be my go to salad.

                                                                            Greek Kale Salad

Ingredients

4 cups finally chopped kale

1 pint cherry tomatoes, cut in half

1/2 red onion, diced

3 mini cucumbers, sliced

1/2 cup crumbled feta cheese

1/2 cup Kalamata olives, cut in half

vinaigrette

2 tablespoons red wine vinegar

2 tablespoons freshly squeezed lemon juice

1 clove garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/2 cup good olive oil

Directions

for the vinaigrette

Combine all ingredients in a pint-size glass jar, Shake to emulsify.

for the salad

Combine all the chopped ingredients in a large bowl, pour the vinaigrette over the salad and toss. Sprinkle with extra feta cheese before serving.
