Ever since my friend Michael gifted me with delicious filberts, more commonly known as hazelnuts, I have been enjoying the challenge of coming up with recipes to highlight these decadent nuts; the latest being a Hazelnut Crusted Salmon. The sweet subtle flavor of the nuts beautifully complements the richness of the salmon. I know I soon will again be making this delectable, healthy, and nutritious dish, so impressive and easy to make.
Hazelnut-Crusted Salmon
Ingredients
4 salmon filets, 6 oz. each
1/2 cup toasted hazelnuts/filberts
1 clove garlic
lemon zest from one lemon
2 tablespoons freshly grated parmesan cheese
4 tablespoons good quality olive oil
salt and pepper to taste
Directions
Preheat oven to 425 degrees F.
Place salmon filets on a parchment lined baking sheet skin side down.
In a food processor, pulse the garlic with the toasted hazelnuts until finally ground.
Pour the ground hazelnuts into a small bowl and mix in the parmesan cheese, lemon zest, and olive oil.
Carefully spoon the nut mixture over the salmon filets and pat down until well covered.
Bake for 8-10 minutes. Let stand for 5 minutes. Enjoy!
