Celebrating my dear friend Linda's birthday is always delightful. Each year I challenge myself to create a cocktail decadent and magical enough to honor Linda on her special day. This year I decided to make a Mermaid Magic Cocktail. Creamy with luscious tropical flavors and elegantly topped with whipped cream and mermaid sprinkles, it is the perfect birthday cocktail. Magic Mermaid Cocktail
Ingredients
1 ounce white rum
1 ounce blue curaçao
2 ounces pineapple juice
1 ounce cream of coconut
juice from 1/2 lime
1 cup crushed ice
whipped cream
mermaid sprinkles
Directions
Pour cream of coconut into a shallow bowl. Place mermaid sprinkles on a small plate. Dip rim of cocktail glass in cream of coconut and then dip rim in mermaid sprinkles.
Combine rum, blue curaçao, pineapple juice, lime juice, cream of coconut, and ice in a blender. Pulse to a creamy consistency. Pour into a cocktail glass. Top with whipped cream and garnish with mermaid sprinkles.
