Spinach Tortellini Soup
Ingredients
4 cups low-sodium chicken broth or vegetable broth
2 cloves fresh garlic, minced
1 large shallot, finely chopped
1/4 teaspoon ground pepper
pinch crushed red pepper flakes (optional)
5 ounces fresh cheese-filled tortellini
2 cups coarsely chopped fresh spinach leaves
freshly grated Parmesan cheese
Directions
Sauté shallots and garlic in a large heavy sauce pan. Add broth and bring to a boil over high heat, Add the tortellini and pepper. Simmer for 10 minutes. Add spinach and cook for an additional 5 minutes or until pasta is tender. Ladle the soup in bowls. Top with freshly grated Parmesan cheese.
