Cranberry Sauce with Grapefruit and Honey

 I have warm and loving memories of my mother and grandmother working together in the kitchen on Thanksgiving day. Together they would stuff the turkey and soon as it went into the oven, they would begin the side dishes. Each side dish was thoughtfully planned, executed, and made to perfection. The one side dish I do not remember them making was cranberry sauce. We had it each Thanksgiving meal, but you see our cranberry sauce came from a can. It was fine; that was until years later when I tasted homemade cranberry sauce. Since then, I have never eaten cranberry sauce from a can again. I like putting a twist on my twist on my cranberry sauce, keeping it traditional with a bit of modern touch to it. This year I am making Cranberry Sauce with Grapefruit and Honey. The tartness of the cranberries and grapefruit paired with the sweetness of the honey and bold flavors of the crystallized ginger makes this cranberry sauce a unique and welcomed side dish for your Thanksgiving feast.

Ingredients
1 bag cranberries (about 3 cups)
1 tablespoon grated grapefruit zest
1 cup fresh grapefruit juice
3/4 cup honey
1/3 cup minced crystallized ginger

Directions
In a heavy saucepan over medium-high heat, combine the cranberries, grapefruit zest, and juice and honey. Bring to a boil, stirring occasionally, until the cranberries pop, about 5 minutes. Remove from the heat and let cool to room temperature. Stir in the crystallized ginger. Transfer to a bowl, cover and refrigerate until well chilled before serving.
