Spicy Cranberry Juice
Ingredients
12 ounces fresh cranberries
1 cup sugar
1 large jalapeno, seeded and finely diced
1 tablespoon lime juice
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
3 tablespoons minced crystallized ginger
2 tablespoons tequila (optional)
1/2 cup water
Directions
Place sugar, lime juice, jalapenos, cayenne, and salt in a heavy bottom saucepan over medium-high heat. Add water, then stir to dissolve sugar, and simmer for 2 minutes.
Add cranberries, crystallized ginger, and tequila. Bring to a boil. Reduce heat to medium and cook, stirring occasionally, until cranberries have softened and no liquid remains in pan, about 15 minutes.
Cool before serving.
May be stored up to 2 weeks in the refrigerator.
