Chickpea Tikka Masala Bowl

This luscious and creamy dish was inspired by the decadent tikka masala bowl I had in a lovely local restaurant, the Village Social Kitchen & Bar. So easy to make, this dish with its bright color and bold flavors is the perfect comfort food for any day. I know I will be making this dish often.

                                                                  Chickpea Tikka Masala Bowl


Ingredients     
1 15-ounce can chickpeas, rinsed and drained well
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 1/2 teaspoons ground coriander
1/2 teaspoon ground cumin
1 teaspoon turmeric
1 1/2 teaspoon freshly grated ginger
1/2 teaspoon garam masala
1/4 teaspoon cayenne pepper
1 15-ounce can tomato puree 
1 tablespoon tomato paste
8 ounces of coconut milk
kosher salt
cooked rice

garnish 
lemon slice
micro greens

Directions
In a dutch oven, heat the oil and add onions. Cook until onions are translucent. Add the garlic and ginger and cook for 1-2 minutes. Add the cumin, turmeric, cayenne, and garam masala, and cook for 1-2 minutes.
Add tomato puree and cook for 5 minutes. Add tomato paste, coconut milk, and chickpeas, stir to combine and bring to a low simmer, and stir occasionally Cover and simmer for 30 minutes, stir occasionally. Season to taste with salt.

Serve with rice. lemon slice, and top with micro greens.
