Roasted Beets with Goat Cheese
Ingredients
4 beets, medium size
olive oil
kosher salt
freshly ground black pepper
2 ounces goat cheese
scallions, thinly sliced, for garnish
Directions
Preheat the oven to 400 degrees F.
Rinse the beets well. Trim the beet greens, leaving about 1 inch of the greens; this will keep the beets from bleeding their juices in the oven.
Rub the beets with olive oil and wrap them tightly in individual aluminum foil packets. Place the wrapped beets on a baking sheet or on the oven rack.
Roast the beets for 45 minutes to 1 hour. Roast until tender when pierced with a wooden skewer.
When cool enough to handle, cut off the leaf end. Push skin off using thumbs.
Cut the beets into bite pieces and arrange them on a plate. Drizzle with olive oil and sprinkle with kosher salt and freshly grated pepper. Top with goat cheese and garnish with sliced scallions.
