                                                                   Roasted Rainbow Carrots



Ingredients
1 pound baby rainbow carrots
1 teaspoon olive oil
1/8 teaspoon kosher salt
chopped chives

Directions
Toss the baby rainbow carrots with olive oil and salt. Arrange in a single layer on a baking sheet. Roast at 450 degrees F, turning once, until tender and slightly brown, about 15 minutes. Sprinkle with chives and season to taste with salt.
