Caprese Pasta Salad
Ingredients
8 oz. dried campanelle pasta
2 cups cherry tomatoes, halved
8 oz. mozzarella balls
1?4 cup fresh basil leaves, torn
salt and freshly ground pepper to taste
for the vinaigrette
1/4 cup olive oil
1/4 cup white balsamic vinegar
2-3 tbsp. fresh lemon juice
1 clove garlic, minced
1 tsp. Italian seasoning
1/4 tsp. kosher salt
1/4 tsp. freshly ground black pepper
Directions
In a small bowl, combine the olive oil, white balsamic vinegar, lemon juice, minced garlic, Italian seasoning, salt and pepper. Whisk until combined. Set aside.
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Strain in a colander and rinse lightly with cold water. Set aside to cool.
While the pasta is cooking, drain the mozzarella balls. Cut the mozzarella balls in half. Slice the cherry tomatoes in half.
In a large serving bowl, add cooked pasta, mozzarella balls, cherry tomatoes, and basil. Drizzle with vinaigrette and toss. Season with salt and freshly ground pepper.
