                                                        Garlic Butter Squid Ink Spaghetti

Ingredients
8 ounces squid ink spaghetti
4 tablespoons butter
3 garlic cloves, minced
mozzarella perlini balls
black olives
kosher salt
freshly ground black pepper
crushed red pepper flakes
Parmesan cheese, freshly grated

Directions
Bring a large pot of salted water to a boil. Add the squid ink spaghetti and cook until al dente. Reserve 3/4 cups of the pasta water, then drain spaghetti.

In a large skillet, melt the butter over low heat. Add the garlic and saute lightly, stirring frequently. Season with salt and black pepper.

While the pasta is cooking, make the eyeballs. Cut each mozzarella ball in half and cut olives in small pieces. Gently press the olive piece, shiny side up, in the center of the mozzarella half.

Toss the cooked spaghetti in the garlic butter sauce. Add the reserved pasta water as needed to enhance the flavor and thicken sauce. Gently tuck the eyeballs into the noodles.

If desired, garnish with crushed red pepper flakes and Parmesan cheese.
