Solar Eclipse Cocktail
Ingredients
1/2 cup tart cherry juice
1/2 ounce fresh lime juice
1/2 ounce honey simple syrup (equal part honey and water)
1 1/2 ounce silver tequila
1/2 ounce Cointreau
1/3 teaspoon yellow sanding sugar
1/3 teaspoon gold sanding sugar
1/4 teaspoon coarse salt
Directions
Combine tart cherry juice, lime juice, and honey simple syrup, mix well. Pour mixture into a circular ice mold. Place into the freezer and freeze for 6-8 hours.
On a small plate combine the yellow and gold sanding sugar with the coarse salt. Rim a coupe glass with the mixture and set aside.
Pour the tequila and Cointreau into an ice-filled cocktail shaker. Shake vigorously, and pour into prepared coupe glass. Gently place the moon-shaped ice cube into the prepared cocktail glass.
