While most people gain weight during the winter by indulging on gooey mac and cheese, savory Shepard's pie, cheesy lasagna, and creamy mashed potatoes, I gain weight in the summer. It is so hard to resist a frothy cocktail, a luscious key lime pie, a dreamy pina colada, or strawberry short cake with cream on top. This summer I plan on keeping my weight in check with this healthy and delicious Greek Kale Salad. This delectable dish with its bold Mediterranean flavors and textures will keep me in shape and allow me to indulge on my favorite summer treats.
Greek Kale Salad
Salad Ingredients
3 1/2 cups kale leaves, finely chopped
1/2 cup radicchio, finely chopped
1 pint cherry tomatoes, halved
1 cucumber, seeded and cut
1/2 red onion, diced
1/4 cup Kalamata olives, halved
3/4 cup artichoke hearts
1 cup chickpeas
1/2 cup crumbled feta cheese
Lemon Dressing Ingredients
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice
1 garlic clove, finely minced
1 teaspoon dried oregano
salt and freshly ground pepper to taste
Directions
In a small bowl, combine extra-virgin olive oil, lemon juice, garlic, oregano, salt, and pepper. Whisk until blended.
Place the kale in a large bowl and massage until it begins to soften. Add the radicchio, cherry tomatoes, cucumber,red onion, Kalamata olives, artichokes, chickpeas, and feta and mix. Pour lemon dressing over the salad and toss gently.
