When I was growing up, Hamburger Helper was all the rage. This heartwarming comfort food was convenient, affordable, and was tasty. Although I enjoyed the various Hamburger Helper dinners, my favorite was the Lasagna.
I decided to recreate a healthier and tastier version of Hamburger Helper Skillet Lasagna. This delectable and budget friendly dish is easy to make, hearty, and healthier than the boxed dinner version - the ultimate comfort food for a chilly wintry day.

Hamburger Helper Skillet Lasagna
Ingredients
8 ounces mafalda noodles, broken
1/2 pound ground beef or
Italian sausage, pork, chicken,
or plant-based, casing removed
4 cups good marinara sauce, homemade or jarred
2 cloves garlic, finely minced
1 small onion, finely chopped
1 1/2 teaspoons dried oregano
1 1/2 dried basil
1 teaspoon salt
1 teaspoon freshly grated black pepper
1 cup shredded mozzarella sauce
flay leaf parsley, chopped
Directions
In a large skillet over medium-heat, cook the sausage until brown and crumbly. Drain and discard the grease. Add the marinara sauce, garlic, onion, oregano, basil, salt, pepper, and mafalda noodles. Bring to a boil and then cover and simmer for 15-20 minutes or until the noodles are tender. Drop the mozzarella cheese on top in batches.
Once the cheese has melted, garnish with chopped parsley and serve.
