Penne alla Vodka is the ultimate comfort food to indulge in on a cold winter day. This creamy and luscious dish with its sublime flavors takes little time to prepare, is satisfyingly delectable, will warm up any chilly day, and is my favorite go-to comfort food.
Penne alla Vodka
Ingredients
1 pound penne
1 tablespoon. extra-virgin olive oil
2 tablespoons butter
1/2 small onion, finally chopped
1 clove garlic, grated
1/4 cup vodka
1/4 cup tomato paste
3/4 cup heavy cream
salt and pepper to taste
crushed red pepper flakes to taste, optional
fresh basil, thinly sliced
freshly grated Parmesan cheese
Directions
Bring a large pot of salted water to a boil. Stir the penne into the boiling water. Bring the water back to a boil and stir frequently. Cook al dente according to the package directions.
While the pasta is cooking, add the extra-virgin olive oil and butter to a skillet over medium heat. Saute the onion and garlic for about 30 seconds.
Add the vodka and bring it to a simmer.
Stir in the tomato paste until the mixture is smooth.
Stir in the cream, reduce heat to medium-low, and simmer until the sauce has thickened.
Season with salt and pepper to taste. Add the crushed red pepper flakes to taste. Toss with the drained pasta. Garnish with fresh basil and Parmesan cheese.
